Pulling Fuse 28 (labelled USB-IP, Instrument Panel) reliably resets the USB port and restores 5V power to the port and everything works as expected.

That removes power from the UConnect system. Try that and see if that reverts the cameras back to normal. If it happens again, take it to the dealer.
